Banana Omelette (Vegan)

  • 6 Green Bananas (under ripe)
  • 1/2 Cup Spelt Flour
  • 1 tsp Baking Powder

Cut the ends off the green bananas and score up the sides of the skin with a knife. Place in a pot full of water and boil for 15-20 minutes until you can easily put a fork through them.
Remove the peel and put the insides in a bowl and mash thoroughly. Add remaining ingredients and knead into a dough. Make into disks and roll out on a floured surface.

Heat a pan on medium until hot. Line the pan with a little coconut oil and fry on one side until golden, about 3 minutes. Flip and cook on the other side.

Serve with nut cheese, salsa, guacamole, scrambled tofu / eggs, sour creme, or mango chantey. It is a real savoury delight!
