Parsnip Puree

Our Organic Parsnips have been so popular. Parsnip is a really under-used root vegetable, so we want to change that. Here is a recipe for parsnip mash, easy, delicious and you will never go back to mash potato…(Paleo people rejoice!).

Parsnip Puree

  • 3 Large Parsnips, washed and Peeled, in rough dice
  • 1 TB of Whole Black Peppercorns (We put our in a tea strainer otherwise they go everywhere)
  • 1 Whole clove of galic
  • 1 Bay Leaf
  • 4 TB of Butter (or substitute coconut oil)

Place all ingredients except the butter in a pot, fill with water and bring to the boil until soft. It can take up to 30 minutes for these roots!

Drain the water and remove the garlic clove, bay leaf and peppercorns.

Add the butter and in the pot mash or for a great consistency, use a hand immersion blender to get it creamy.
