Chocolate Rice Pudding
- 200g Arborio/Pudding Rice, washed
- 350ml Water
- 475ml Almond Milk/Coconut Milk
- 4 TB Cocoa Powder
- 1/4 Tsp Cinnamon
- 50g of Plain/Dark Chocolate
- 5 TB Maple Syrup/Honey
- 1 tsp Vanilla Extract
Place rice, water and 350ml of almond milk into a pan to bring to the boil, covered. Lower the heat and simmer for 10 mins until the rice looks cooked.
Add cocoa, cinnamon, chocolate and stir until incorporated/melted. Add the rest of the almond milk, honey and vanilla and stir constantly for 5 mins. If you notice the pan getting dry, add a little more almond milk.
Let the pot come to room temp and then either serve or chill, depending how you like it.
