We love making these in our house as they are super easy! You can skip the last step if you want them faster!
- 1 Cup Almond or Chestnut Flour
- 1/4 Cup Coconut Flour Sifted
- 1 egg
- 1/2 tsp salt
- 1/4 Cup Cocoa Powder
- 3 TB Honey
- 2 tsp Peppermint Extract
- 1/8 Cup Coconut Oil
- 1 cup chocolate chips (Optional)
- 1 tsp Peppermint (Optional)
Heat the oven to 180 degrees and prepare a cookie sheet with greaseproof paper.
Mix together the dry ingredients in a large bowl. Whisk the wet ingredients together and mix together in the bowl until a dough has formed up. Roll 1 TB of dough into a ball and flatten into a disk. Bake on the sheet until dry, about 15 minutes.
For extra indulgence, add chocolate chips and peppermint to a double boiler until melted. Dunk 1/2 of the cookie into the chocolate and return t the sheet to cool and set.
