We have had lots of you write to us with the favourite dish that your mum’s made for you. We have tweaked this traditional recipe into something vegan, yummy and extra indulgent!
- 6-7 Cups of stale bread (Gluten Free Tiger Loaf is great for this)
- 1/2 Cups Almond Milk
- 3 TB Arrowroot
- 1/2 Cup Maple Syrup or Coconut Nectar
- 1 tsp Vanilla or a scraped vanilla pod for extra indulgence
- 1/2 tsp cinnamon
- Pinch cardamom
- 1/4 tsp nutmeg
- 1 cup chocolate chips
- 3 bananas sliced
Heat the oven to 180 degrees and prepare a baking dish about 9 inches square.
Mix the arrowroot and 1/2 cup of milk together in a small bowl. Add the remaining milk, syrup, spices and mix together. Pour over the bread cubes. Let the bread absorb the fluid for about 10 mins.
If the mixture absorbs everything and is still a bit dry, add more milk!
Mix in the bananas and chocolate chips and pour the mix into the pan. Bake for 30-35 minutes and let cool slightly. Enjoy with some cream, fresh fruit or with jam (that is my favourite!)
