When I am in a rush and need to put something on the table, I reach for the sweet potatoes that I keep in constant supply in the cupboard. If you have a food processor (if you don’t, you really should look into that. Not everything needs to be so difficult) this will take about 8 minutes in total to get a great side and with some eggs, a whole meal!
- 3 Sweet potato, Should have about 3 cups once shredded
- 1/2 tsp garlic powder
- 1.2 tsp onion powder
- 1/2 tsp oregano or rosemary or thyme
- 2 TB fav oil, coconut oil or ghee
- 1/2 Tsp Salt or more to taste
Grate or process the sweet potato and season with the salt and a bit of pepper and all the spices. Mix evenly.
In a frying pan or skillet, melt the oil and stir fry for about 1 minute. Cover the pan and cook for 5 minutes until it starts to brown.
Want to amp up the meal? Fry up two eggs or put some mince through the hash. Sprinkle with caramelised onion or crispy lardons
