This is a staple in our house for a quick and easy dinner. You can add anything from veg to certain fruits and it just tastes amazing. The spice mix is strong and packs a punch but the coconut milk really calms is down.
- 450 Grams of Chicken breasts or thigh / Seitan Cutlets
- 1 TB Coconut Oil
- 1 Onion
- 1 Red + 1 Green Pepper
- 1 tsp Arrowroot Powder
- 2 Cloves of Garlic
- Sachet of Jerk Seasoning from HSWF
- Juice of 1 Lime
- 1 Cup coconut Milk
- (Optional Cup of veg: steamed 1/2 moons of Sweet Potato; Grilled pineapple chunks; Roasted Veg)
Cut the chicken/seitan into strips and cook for about 5 minutes each side with 1/2 TB of oil in a pan. Set aside to catch any juices and save for later.
Cook peppers, onion and arrowroot until tender with the remaining coconut oil in the same pan. Cook for about 8 minutes and then add garlic and seasoning sachet for about 30 seconds. Deglaze the pan with lime juice and a little water if it is too dry.
Add coconut milk, chicken/seitan and optional extras and cook for another 5 minute until heated through. Serve with Rice or Cauliflower rice.
