If you eat Paleo (no grains, beans, pulses etc.) you might miss the warmth of porridge in the morning, especially at this chilly time of year. If you prep this the night before you can have this made in 10 minutes in the morning!
(Inspired by Danielle Walker’s Against the Grain recipe)
- 1/2 Cup Cashews
- 1/2 Cup Almonds
- 1/2 Cup Pecan/Walnut
- Pinch of salt
- 1 Over ripe Banana
- 2 Cups Coconut/Almond Milk
- 2 tsp Cinnamon
- 1 tsp flax meal (optional)
- ( 1 TB Cocoa Powder for Chocolate Porridge)
Put the mixed nuts in a jug and cover with water and sprinkle of salt overnight.
In the morning, rinse a few times to drain the water clear. Add the nuts to a blender and add the remaining ingredients until smooth. Pour the mix into a saucepan and heat on medium until heated through.
